- 70 gCouscous, dry weight
- 150 mlVegetable stock
- 100 gPeppers
- 100 gCourgette
- 30 gOnion
- 10 gOlive oil (1 tbsp)
- Cumin, lemon, parsley, chilli, spring onion, salt
How to make it
- Bring the stock to the boil, pour it over the couscous, lid on, leave for five minutes. Fluff it up with a fork.
- Dice the pepper, courgette and onion and fry them in oil over high heat for eight minutes. Add the cumin and salt.
- Fold the vegetables through the couscous, then add lemon, parsley, chilli rings and spring onion.
One tip
Do not boil couscous. Boiling makes it mushy, steeping makes it fluffy.
