Quinoa is the one grain that carries all the amino acids on its own. With edamame and avocado it becomes a bowl that needs no animal and still lasts until the evening.

Ingredients

  • 70 gQuinoa, dry weight
  • 80 gEdamame, frozen
  • 75 gAvocado (½ piece)
  • 100 gCarrots
  • 50 gRed cabbage
  • 150 gTomatoes
  • 10 gOlive oil (1 tbsp)
  • Salt, pepper, lemon

How to make it

  1. Rinse the quinoa in a sieve under cold water, then cook it in twice its volume of water for 15 minutes, until the water is gone.
  2. Add the edamame to the water for the last three minutes.
  3. Cut the carrots and red cabbage into fine strips, quarter the tomatoes, slice the avocado.
  4. Quinoa into the bowl, vegetables in sections on top. Oil, lemon, salt and pepper over it.

One tip

Rinsing matters. Unrinsed quinoa tastes bitter, and the reason is a coating on the grain that disappears in the sieve.
