Minestrone is the soup that takes whatever is in the fridge. Beans and pasta make it filling, rosemary and tomato make it Italian.

- 100 gWhite beans, drained
- 60 gSmall pasta shapes
- 100 gCarrots
- 100 gCourgette
- 100 gCelery
- 80 gOnion
- 200 gTinned tomatoes
- 800 mlVegetable stock
- 15 gOlive oil (1 tbsp)
- Garlic, rosemary, basil, salt, pepper
How to make it
- Dice the onion, carrot and celery, soften them in the oil for five minutes, add the garlic and rosemary.
- Add the tomatoes and stock, bring to the boil, simmer for 15 minutes.
- Add the courgette, beans and pasta for another ten minutes, until the pasta is done.
- Salt, pepper, serve with basil.
One tip
The pasta only goes in at the end, otherwise it drinks the whole soup when you reheat it.
