A bolognese needs time but no attention. Mince, carrot, celery, onion, tomato, and then three quarters of an hour over a low flame.

- 120 gMinced beef, lean
- 200 gTinned tomatoes
- 50 gCarrots
- 30 gCeleriac
- 30 gOnion
- 15 gTomato purée (1 tbsp)
- 10 gOlive oil (1 tbsp)
- 20 gParmesan, grated
- Salt, pepper, bay leaf, oregano
How to make it
- Finely dice the carrot, celery and onion and soften them in the oil for five minutes.
- Add the mince and brown it, breaking it up. Toast the tomato purée for a minute.
- Add the tomatoes, bay, oregano, salt and pepper, lid half on, simmer for 45 minutes. A splash of water if it needs it.
- Cook the spaghetti, toss with the sauce, Parmesan over the top.
One tip
Cook three times the amount. Bolognese freezes like nothing else, and the work is the same.
