In Rome no cream goes into a carbonara. The sauce comes from egg, cheese and hot pasta water, and the pork gives the fat. The trick is taking the pan off the heat before the egg goes in.

- 80 gbacon (pancetta or guanciale)
- 100 gEggs (2 piece)
- 34 gEgg yolk (2 piece)
- 50 gPecorino, grated
- Black pepper, salt
How to make it
- Cook the spaghetti in salted water until firm to the bite and save a cup of the water.
- Fry the diced pork slowly in the pan until crisp.
- Beat the eggs, egg yolk, pecorino and plenty of pepper together.
- Pasta into the pan with the pork, pan off the heat, stir in the egg mixture and a splash of pasta water until the sauce is creamy.
One tip
Too hot and it turns into scrambled egg. The residual heat of the pasta is enough.
