- 250 gSquash, diced
- 60 gCashews
- 200 mlAlmond milk, unsweetened
- 15 gOlive oil (1 tbsp)
- 10 gMustard (2 tsp)
- 10 gLemon juice (2 tsp)
- Garlic, paprika, nutmeg, nutritional yeast to taste, salt
How to make it
- Soak the cashews in hot water for 15 minutes. Boil the squash soft in salted water and drain it.
- Cook the pasta.
- Blend the squash, drained cashews, almond milk, oil, mustard, lemon, garlic and spices smooth, then salt.
- Warm the sauce in a pot and fold in the pasta.
One tip
A tablespoon of nutritional yeast brings the savoury cheese note if you miss it.
