- 100 gshell pasta (conchiglioni)
- 150 gSpinach
- 50 mlCream
- 50 mlMilk
- 30 gParmesan, grated
- 40 gOnion
- 10 gOlive oil (1 tbsp)
- Garlic, nutmeg, salt, pepper
How to make it
- Cook the pasta in salted water, keeping a cup of the cooking water.
- Soften the onion and garlic in the oil, add the spinach and let it wilt.
- Pour in the cream and milk, reduce for two minutes, stir in the Parmesan, season with nutmeg, salt and pepper.
- Fold in the pasta, thinning the sauce with a little pasta water until it fills every shell.
One tip
The pasta water binds the sauce through its starch better than more cream would.
