How to make it
- Oven to 180 degrees. Finely dice the onion and garlic, soften them in a third of the oil and spread them in a round dish.
- Slice the courgette, aubergine and tomatoes evenly thin, ideally on a mandoline.
- Stand the slices in the dish alternating and overlapping in a circle, from the outside in.
- Drizzle with the rest of the oil, salt, pepper, thyme over the top, cover with baking paper.
- Bake for 35 minutes, take the paper off, Parmesan on top, bake uncovered for 15 more minutes.
One tip
Stand the slices tightly enough that they hold upright. They shrink as they bake and the row settles.
