Braised dry, not in sauce: potatoes and cauliflower cook in the pan with the spices and take on colour. A flatbread alongside, and that is all it needs.

- 15 gCanola oil (1 tbsp)
- 120 gNaan (2 piece)
- Turmeric, cumin, ginger, garlic, chilli, coriander, salt
How to make it
- Cut the potatoes into small cubes and the cauliflower into florets.
- Toast the cumin in the oil, add the onion, ginger and garlic and fry until translucent.
- Add the potatoes, cauliflower, turmeric, chilli and salt, fry for three minutes, add the tomato and 50 ml of water, lid on, cook over low heat for 20 minutes.
- Take the lid off, turn the heat up, cook off the liquid, serve with coriander and warm naan.
One tip
Do not stir too often or the cauliflower falls apart. Once, halfway, is enough.
