Without cheese the vegetables have to do the work: plenty of them, thinly sliced, with oil and salt. The rocket goes on raw after baking.

  • 250 gPlain flour
  • 4 gDried yeast (1 tsp)
  • 20 gOlive oil (2 tbsp)
  • 200 gPassata
  • 100 gPeppers
  • 100 gCourgette
  • 80 gMushrooms
  • 40 gRed onion
  • 30 gOlives
  • 30 gRocket
  • 160 ml water, salt, oregano, garlic

How to make it

  1. Knead the flour, yeast, lukewarm water, half the oil and a teaspoon of salt for ten minutes into a smooth dough.
  2. Cover and prove for 90 minutes. Heat the oven with a tray at its highest setting.
  3. Slice the vegetables thinly, the mushrooms too.
  4. Halve the dough, stretch it thin, spread with the tomatoes, salt and oregano, vegetables and olives on top, drizzle with the rest of the oil.
  5. Bake on the hot tray for eight to ten minutes until the rim browns.
  6. Rocket only after baking.

One tip

If you miss the cheese, scatter nutritional yeast or a few chopped cashews over it.
