The vegan version of fried rice: no egg, more vegetables, and a pan hot enough for the rice to take on toasted notes. Day-old rice is compulsory.

- 60 gPeas, frozen
- 60 gCarrot
- 60 gPeppers
- 30 gSpring onion
- 15 gSoy sauce (1 tbsp)
- 10 gCanola oil (1 tbsp)
- Ginger, garlic, white pepper
How to make it
- Get the oil very hot, fry the finely diced carrot and pepper for two minutes.
- Add the ginger, garlic and peas for another minute.
- Add the rice and fry over high heat for three minutes, turning.
- Fold in the soy sauce, pepper and spring onion.
One tip
A spoon of peanut butter in the rice makes it more filling and tastes of a street kitchen.
