Biryani is rice in the lead role: fried with spices, steamed with vegetables, crowned with cashews and raisins. One pot, one lid, one meal.

Ingredients

  • 80 gBasmati rice, raw
  • 60 gCarrot
  • 60 gPeas, frozen
  • 60 gGreen beans
  • 60 gOnion
  • 15 gCanola oil (1 tbsp)
  • 20 gCashews
  • 15 gRaisins
  • Garam masala, turmeric, cinnamon, ginger, garlic, coriander, salt

How to make it

  1. Soak the rice in water for 20 minutes and drain it.
  2. Fry the onion golden in the oil, toast the ginger, garlic and spices with it.
  3. Add the carrot and bean pieces, fry for two minutes, then the rice, peas, salt and 160 ml of water.
  4. Bring to the boil, lid on, cook over the lowest heat for 15 minutes, rest for five.
  5. Toast the cashews in a pan and scatter them over the rice with the raisins and coriander.

One tip

Do not stir while the rice cooks. The lid stays on until the time is up.
