A hot noodle soup in 20 minutes. Shiitake give the broth what meat usually gives, ginger and chilli wake it up. Vegan, and without a stock cube if you like.

- 700 mlVegetable stock
- 80 gShiitake
- 80 gWheat noodles, dried
- 80 gPak choi
- 30 gSpring onion
- 15 gSoy sauce (1 tbsp)
- 5 gSesame oil (1 tsp)
- Ginger, garlic, chilli
How to make it
- Fry the ginger, garlic and chilli briefly in the sesame oil, add the sliced shiitake and fry for two minutes.
- Add the stock and soy sauce and simmer for ten minutes.
- Cook the noodles in the soup, adding the pak choi for the last minute.
- Serve with spring onion.
One tip
Dried shiitake give more flavour than fresh. Soak them for half an hour and pour the water into the soup.
