Pre-cooked beetroot from a vacuum pack saves an hour. With quinoa and walnuts it becomes a salad that fills you up and has the colour of a sunset.

- 120 gQuinoa
- 200 gBeetroot, cooked
- 100 gCucumber
- 60 gSalad leaves
- 40 gRed onion
- 30 gWalnuts
- 20 gOlive oil (2 tbsp)
- 15 gLemon juice (1 tbsp)
- Mint, salt, pepper
How to make it
- Cook the quinoa in twice its volume of water for fifteen minutes and let it cool.
- Dice the beetroot and cucumber, slice the onion into rings, chop the walnuts.
- Mix everything with the salad, oil, lemon, mint, salt and pepper.
One tip
Fold the beetroot in last, or everything turns pink.
