India's best-known chickpea dish, and one of the simplest: the sauce is onion, tomato and spices, the chickpeas come from a tin, the rice cooks alongside.

- 240 gChickpeas, drained
- 200 gTinned tomatoes
- 80 gOnion
- 10 gGinger
- 15 gCanola oil (1 tbsp)
- 70 gRice, raw
- Garam masala, cumin, turmeric, garlic, coriander, salt
How to make it
- Cook the rice. Fry the onion, ginger and garlic golden in the oil.
- Toast the cumin, turmeric and garam masala briefly, add the tomatoes and reduce for five minutes.
- Add the chickpeas and 100 ml of water, simmer for 15 minutes, crushing a few so the sauce binds.
- Salt it and serve with coriander and the rice.
One tip
A squeeze of lemon at the end lifts every spice in the pot.
