Couscous needs no stove, only boiling water and five minutes. With spring vegetables it becomes a salad that is green and stays crunchy.

- 200 gGreen asparagus
- 100 gPeas
- 80 gRadishes
- 20 gOlive oil (2 tbsp)
- 20 gLemon juice (1 tbsp)
- Chives, mint, salt, pepper
How to make it
- Pour the same volume of boiling salted water over the couscous, cover it, let it swell for five minutes, fluff it with a fork.
- Blanch the asparagus pieces and peas for three minutes and cool them.
- Mix into the couscous with the sliced radishes, herbs, oil and lemon, then season.
One tip
Lukewarm or cold. In summer from the fridge, with more lemon.
