Fried potatoes work with boiled potatoes from the day before, not with raw ones. Bacon, peppers, sweetcorn and onion in the same pan, and the fried eggs on top at the end.

- 300 gPotatoes, cooked the day before
- 110 gEggs (2 piece)
- 100 gPeppers
- 40 gOnion
- 15 gCanola oil (1.5 tbsp)
- Salt, pepper, paprika, spring onion
- 40 gStreaky bacon, diced
- 50 gSweetcorn
How to make it
- Slice or dice the potatoes. Fry them in the oil over medium heat for ten minutes, turning only once the underside is brown.
- Add the bacon, peppers and onion and fry for five more minutes, the sweetcorn for the last one. Salt, pepper, paprika.
- Push two hollows clear, crack in the eggs, lid on, three minutes until the whites are set.
- Spring onion in rings over the top, eat from the pan.
One tip
Leave the potatoes alone. Keep turning them and you get steamed potatoes in oil.
