Kefta is seasoned mince shaped around a skewer and grilled. The mix of beef and lamb is Moroccan, the herbs keep it fresh and the yoghurt cools it.

- 100 gOnion
- 15 gOlive oil (1 tbsp)
- 120 gPitta bread (2 piece)
- 150 gPlain yoghurt
- Parsley, mint, cumin, coriander, peppers, cinnamon, garlic, salt, pepper
How to make it
- Knead the mince thoroughly with the finely grated onion, herbs, spices, salt and pepper and chill for thirty minutes.
- Shape it around skewers, brush with oil, cook on the grill or in a griddle pan for eight minutes, turning.
- Stir the yoghurt with the mint, garlic and salt and serve with pita.
One tip
Grate the onion, do not chop it. Grated it binds, chopped it makes the skewer fall apart.
