Piccata is the fastest way to make chicken breast into something fine: thin, floured, briefly fried, then a sauce from the pan with lemon, wine and capers. Sharp, salty, buttery.

- 30 gPlain flour (2 tbsp)
- 30 gButter
- 10 gOlive oil (1 tbsp)
- 80 mlWhite wine
- 100 mlChicken stock
- 40 gLemon, juice and slices (1 piece)
- 20 gCapers (2 tbsp)
- Parsley, salt, pepper
How to make it
- Halve the chicken lengthways, flatten it, salt and pepper it, turn it in flour.
- Fry in the oil with half the butter for three minutes a side and take it out.
- Reduce the wine, stock, lemon juice and capers in the pan, stir in the rest of the butter, chicken back in, serve with lemon slices and parsley.
