Mapo tofu comes from Sichuan, which means hot and numbing at once. The Sichuan pepper tingles, the chilli sauce burns, the soft tofu calms it. On rice, with a spoon.

- 150 gMinced pork
- 30 gSoy sauce (2 tbsp)
- 30 gHot chilli sauce (2 tbsp)
- 15 gMiso (1 tbsp)
- 40 gSpring onion
- 10 gCornflour (2 tsp)
- 15 gCanola oil (1 tbsp)
- 200 mlChicken stock
- 140 gRice, raw
- Sichuan pepper, ginger, garlic
How to make it
- Cook the rice. Let the diced tofu stand in salted water for three minutes and drain it.
- Fry the mince crumbly in the oil, add the ginger, garlic, chilli sauce and miso and toast for a minute.
- Add the stock and soy sauce, lay in the tofu, simmer for five minutes, thicken with the slaked cornflour.
- Ground Sichuan pepper and spring onion over the top, serve on the rice.
One tip
The salted water bath firms the tofu so it does not fall apart in the sauce.
