Okonomiyaki means grilled how you like it. The base is a pancake batter full of cabbage, and on top goes whatever is around. In Osaka it is cooked at the table on an iron plate.

  • 400 gWhite cabbage, finely sliced
  • 120 gPlain flour
  • 100 gEggs (2 piece)
  • 80 gStreaky bacon (6 slices)
  • 40 gSpring onion
  • 20 gMayonnaise (1 tbsp)
  • 20 gHoisin sauce (1 tbsp)
  • 10 gKetchup (2 tsp)
  • 150 ml water, ginger, sesame seeds, salt

How to make it

  1. Stir the flour, eggs, water and salt into a batter and fold in the cabbage and spring onion.
  2. Stir the hoisin and ketchup into a sauce.
  3. Half the batter as a thick cake into a non-stick pan, bacon slices on top, cover and cook for five minutes, turn, five minutes more.
  4. Serve with the sauce, mayonnaise, sesame and spring onion, and do the second one the same way.

One tip

Turn it with two spatulas, or with a plate like a Spanish tortilla.
