Okonomiyaki means grilled how you like it. The base is a pancake batter full of cabbage, and on top goes whatever is around. In Osaka it is cooked at the table on an iron plate.

- 400 gWhite cabbage, finely sliced
- 120 gPlain flour
- 100 gEggs (2 piece)
- 80 gStreaky bacon (6 slices)
- 40 gSpring onion
- 20 gMayonnaise (1 tbsp)
- 20 gHoisin sauce (1 tbsp)
- 10 gKetchup (2 tsp)
- 150 ml water, ginger, sesame seeds, salt
How to make it
- Stir the flour, eggs, water and salt into a batter and fold in the cabbage and spring onion.
- Stir the hoisin and ketchup into a sauce.
- Half the batter as a thick cake into a non-stick pan, bacon slices on top, cover and cook for five minutes, turn, five minutes more.
- Serve with the sauce, mayonnaise, sesame and spring onion, and do the second one the same way.
One tip
Turn it with two spatulas, or with a plate like a Spanish tortilla.
