Tsukune are the meatballs of the yakitori bar: soft, savoury, with a glossy glaze. In Japan they are dipped in raw egg yolk. Here the glaze is enough.

- 50 gEgg (1 piece)
- 30 gwhite breadcrumbs
- 40 gSoy sauce (3 tbsp)
- 15 gHoney (1 tbsp)
- 10 gSesame seeds (2 tsp)
- 120 gRice, raw
- Ginger, garlic, salt, pepper
How to make it
- Knead the mince with the spring onion, egg, breadcrumbs, ginger, salt and pepper and shape long balls around skewers.
- Reduce the soy sauce, honey and garlic with two tablespoons of water.
- Cook the skewers in a griddle pan for eight minutes, turning, brushing with the glaze for the last two.
- Serve with sesame and rice.
One tip
The mixture is soft. Shape it with wet hands and firm pressure.
