Tsukune are the meatballs of the yakitori bar: soft, savoury, with a glossy glaze. In Japan they are dipped in raw egg yolk. Here the glaze is enough.

  • 400 gMinced chicken
  • 40 gSpring onion
  • 50 gEgg (1 piece)
  • 30 gwhite breadcrumbs
  • 40 gSoy sauce (3 tbsp)
  • 15 gHoney (1 tbsp)
  • 10 gSesame seeds (2 tsp)
  • 120 gRice, raw
  • Ginger, garlic, salt, pepper

How to make it

  1. Knead the mince with the spring onion, egg, breadcrumbs, ginger, salt and pepper and shape long balls around skewers.
  2. Reduce the soy sauce, honey and garlic with two tablespoons of water.
  3. Cook the skewers in a griddle pan for eight minutes, turning, brushing with the glaze for the last two.
  4. Serve with sesame and rice.

One tip

The mixture is soft. Shape it with wet hands and firm pressure.
