Tikka means piece: cubes of chicken that sit in yoghurt with paprika, cumin and garam masala until they are red and tender. On the grill they take dark edges as if from a tandoor.

  • 400 gChicken breast
  • 150 gGreek yoghurt, for the marinade
  • 100 gGreek yoghurt, for the dip
  • 80 gRed onion
  • 10 gCanola oil (1 tbsp)
  • 20 gLemon juice (1 tbsp)
  • Ginger, garlic, peppers, cumin, garam masala, turmeric, chilli, mint, salt

How to make it

  1. Marinate the diced chicken in the yoghurt, lemon, ginger, garlic and spices for two hours.
  2. Thread it on skewers, brush with oil, cook on the grill or in a griddle pan for ten minutes, turning often.
  3. Stir the yoghurt with the mint and salt and serve with onion rings and lemon.

One tip

Marinated overnight is better. The yoghurt works with time.
