Tikka means piece: cubes of chicken that sit in yoghurt with paprika, cumin and garam masala until they are red and tender. On the grill they take dark edges as if from a tandoor.

- Ginger, garlic, peppers, cumin, garam masala, turmeric, chilli, mint, salt
How to make it
- Marinate the diced chicken in the yoghurt, lemon, ginger, garlic and spices for two hours.
- Thread it on skewers, brush with oil, cook on the grill or in a griddle pan for ten minutes, turning often.
- Stir the yoghurt with the mint and salt and serve with onion rings and lemon.
One tip
Marinated overnight is better. The yoghurt works with time.
