Karnıyarık means split belly: the aubergine is fried, opened lengthways and filled with mince, then finished in the oven. A Turkish Sunday dinner.

  • 600 gAubergines (2 piece)
  • 250 gMinced beef
  • 100 gOnion
  • 200 gTomatoes
  • 60 gPointed peppers
  • 20 gTomato purée (1 tbsp)
  • 30 gOlive oil (3 tbsp)
  • 100 gRice, raw
  • Garlic, parsley, paprika, salt, pepper

How to make it

  1. Peel the aubergines in stripes, fry them soft all over in the oil, cut them open lengthways, set them in a dish.
  2. Fry the mince crumbly with the onion and garlic, add half the tomatoes diced, the tomato purée, paprika and parsley, then season.
  3. Fill the aubergines with the mince, the rest of the tomato slices and the peppers on top, a cup of water into the dish.
  4. Bake at 190 degrees for forty minutes and serve with rice.

One tip

Let the aubergines go properly soft as they fry. Then they open like a pocket.
