The balls are browned first and then cook through in the sauce, which keeps them juicy. Parmesan and breadcrumbs in the mince keep them light.

Ingredients

  • 160 gMinced beef
  • 30 gEgg, beaten (½ piece)
  • 20 gwhite breadcrumbs
  • 20 gParmesan, grated
  • 30 gOnion
  • 200 gPassata
  • 10 gOlive oil (1 tbsp)
  • Garlic, basil, oregano, salt, pepper

How to make it

  1. Mix the mince with the egg, breadcrumbs, Parmesan, half the onion, salt and pepper and shape it into balls.
  2. Brown them all over in the oil, then take them out.
  3. Soften the rest of the onion and the garlic in the pan, add the tomatoes and oregano, bring to the boil.
  4. Balls back into the sauce, simmer gently for 15 minutes, basil over the top.

One tip

Pasta, bread or a salad all work alongside. The balls keep for three days in the fridge.
