On the coast of Bahia moqueca is cooked in clay pots: fish and prawns poaching in coconut milk, tomatoes and peppers. Coriander and lime at the end, rice beside it.

How to make it

  1. Cook the rice. Marinate the fish pieces and prawns in the lime, garlic and salt for ten minutes.
  2. Soften the onion, peppers and tomatoes in rings and slices in the oil for five minutes and add the paprika.
  3. Lay the fish and prawns on top, pour in the coconut milk, cover and let it stand for ten minutes without stirring.
  4. Serve with coriander, chilli and the rice.

One tip

Palm oil makes a real moqueca orange. Without it, it tastes the same, only paler.
