In a pesto cashews replace both the Parmesan and the pine nuts: creamy, faintly sweet, and half the price. The blender needs a minute.

Ingredients

  • 100 gFusilli
  • 30 gBasil
  • 30 gCashews
  • 20 gOlive oil (2 tbsp)
  • 10 gLemon juice (2 tsp)
  • Garlic, salt, nutritional yeast to taste

How to make it

  1. Cook the pasta in salted water, keeping a cup of the cooking water.
  2. Blend the basil, cashews, oil, lemon, garlic and salt into a paste.
  3. Loosen the pesto with a little pasta water and toss the pasta in it.

One tip

Under a layer of oil the pesto keeps three days in the fridge.
