Primavera means spring, and that is how it tastes: green vegetables, briefly cooked, in a sauce with just enough cream to coat the pasta.
Ingredients
Forservings
- 180 gFusilli
- 200 gBroccoli
- 100 gPeas
- 100 gGreen asparagus
- 100 gMushrooms
- 100 mlDouble cream
- 30 gParmesan, grated
- 10 gOlive oil (1 tbsp)
- Garlic, lemon zest, salt, pepper
How to make it
- Cook the pasta firm to the bite, adding the broccoli and asparagus for the last three minutes and the peas for the last one.
- Fry the mushrooms in the oil with the garlic, add the cream, reduce briefly.
- Pasta and vegetables into the pan, stir in the Parmesan and lemon zest, season.
One tip
Cooking the vegetables in the pasta water saves a pot and keeps them green.
