Quinoa tabbouleh with avocado

Tabbouleh is a herb salad with a little grain, not the other way round. With quinoa it becomes gluten free and higher in protein, with avocado a whole meal.

Ingredients

  • 70 gQuinoa, raw
  • 120 gCherry tomatoes
  • 100 gCucumber
  • 60 gPeppers
  • 70 gAvocado (½ piece)
  • 30 gParsley
  • 20 gLemon juice (½ piece)
  • 15 gOlive oil (1 tbsp)
  • Mint, salt, pepper

How to make it

  1. Rinse the quinoa, cook it in twice its volume of salted water for 15 minutes and let it cool.
  2. Halve the tomatoes, dice the cucumber, pepper and avocado, finely chop the parsley and mint.
  3. Mix everything with lemon, oil, salt and pepper.

One tip

The parsley is the main ingredient. Too little of it and you have quinoa salad, not tabbouleh.
