Tabbouleh is a herb salad with a little grain, not the other way round. With quinoa it becomes gluten free and higher in protein, with avocado a whole meal.

- 70 gQuinoa, raw
- 120 gCherry tomatoes
- 100 gCucumber
- 60 gPeppers
- 70 gAvocado (½ piece)
- 30 gParsley
- 20 gLemon juice (½ piece)
- 15 gOlive oil (1 tbsp)
- Mint, salt, pepper
How to make it
- Rinse the quinoa, cook it in twice its volume of salted water for 15 minutes and let it cool.
- Halve the tomatoes, dice the cucumber, pepper and avocado, finely chop the parsley and mint.
- Mix everything with lemon, oil, salt and pepper.
One tip
The parsley is the main ingredient. Too little of it and you have quinoa salad, not tabbouleh.
