In Argentina chimichurri goes with every piece of meat off the grill: green, sharp, sour, stirred raw. The steak needs nothing but salt and heat.

Ingredients

  • 300 gBeef steak (1 piece)
  • 25 gOlive oil (2 tbsp)
  • 15 gRed wine vinegar (1 tbsp)
  • Parsley, coriander, garlic, oregano, chilli flakes, salt, pepper

How to make it

  1. Finely chop the parsley, coriander and garlic, mix with the oil, vinegar, oregano, chilli and salt, leave for ten minutes.
  2. Salt the steak, cook it on the grill or in a very hot pan for three minutes a side, rest for five.
  3. Slice across the grain and spoon the chimichurri over.

One tip

Chimichurri is not blended. Chopped it stays green and coarse.
