In Argentina chimichurri goes with every piece of meat off the grill: green, sharp, sour, stirred raw. The steak needs nothing but salt and heat.

- 300 gBeef steak (1 piece)
- 25 gOlive oil (2 tbsp)
- 15 gRed wine vinegar (1 tbsp)
- Parsley, coriander, garlic, oregano, chilli flakes, salt, pepper
How to make it
- Finely chop the parsley, coriander and garlic, mix with the oil, vinegar, oregano, chilli and salt, leave for ten minutes.
- Salt the steak, cook it on the grill or in a very hot pan for three minutes a side, rest for five.
- Slice across the grain and spoon the chimichurri over.
One tip
Chimichurri is not blended. Chopped it stays green and coarse.
