- 80 gRicotta
- 80 gCherry tomatoes
- 10 gOlive oil (1 tbsp)
- Basil or parsley, chilli flakes, salt, pepper
How to make it
- Oven to 200 degrees. Wash the sweet potato, prick it, bake it on the shelf for 45 minutes.
- Cut it open lengthways, fluff the flesh with a fork, salt it.
- Ricotta inside, halved tomatoes on top, then oil, herbs, chilli and pepper.
One tip
For more protein swap the ricotta for cottage cheese and add an egg.
