Tabbouleh is a parsley salad with a little bulgur, not the other way round. Plenty of green, tomato, lemon, and the bulgur only so it fills you up.
Ingredients

- 50 gBulgur, fine
- 60 gParsley (2 Bund)
- 150 gTomatoes
- 100 gCucumber
- 30 gSpring onion
- 10 gOlive oil (1 tbsp)
- Lemon, mint, salt
How to make it
- Pour the same volume of boiling water over the bulgur, lid on, leave to swell for 15 minutes.
- Finely chop the parsley and mint, dice the tomatoes and cucumber small, slice the spring onion.
- Mix everything with the bulgur, then oil, plenty of lemon juice and salt.
One tip
Chop the parsley with a sharp knife, not in a blender. Bruised, it turns bitter.
