Glass noodles need nothing but hot water, prawns two minutes in the pan. The dressing of lime, soy sauce and chilli turns it into a salad that wakes you up.

- 150 gPrawns, peeled
- 60 gglass noodles or rice noodles
- 100 gPeppers
- 60 gCarrots
- 30 gSpring onion
- 15 gSoy sauce (1 tbsp)
- 10 gSesame oil (2 tsp)
- Lime, chilli, garlic, coriander
How to make it
- Soak the glass noodles in hot water as it says on the packet, drain and rinse cold.
- Cut the pepper and carrot into fine strips, the spring onion into rings.
- Fry the prawns with the garlic in half the sesame oil for two minutes a side.
- Whisk the soy sauce, remaining oil, lime juice and chilli. Toss everything, coriander over the top.
One tip
Snip the glass noodles with scissors before they go in the salad. A metre long, they wind around the fork.
