How to make it
- Cut the apple into thin wedges, roughly chop the walnuts.
- Whisk the oil, a tablespoon of vinegar, half a teaspoon of mustard, salt and pepper.
- Toss the spinach with the dressing, then add the apple, nuts, cranberries and crumbled feta.
One tip
Cut the apple last, once everything else is ready. It browns as soon as it waits.
