Tarte flambée was baked in Alsace to test the heat of the bread oven: thin dough, cream, onion, bacon, a few minutes. The dough needs no yeast, only rest.

- 10 gOlive oil (1 tbsp)
- 150 gSoured cream
- 150 gOnions
- 100 gStreaky bacon
- 100 ml water, nutmeg, salt, pepper
How to make it
- Knead the flour, water, oil and salt into a smooth dough and rest it for thirty minutes. Heat the oven to its highest setting.
- Roll the dough out paper thin, spread with the soured cream, season with nutmeg, salt and pepper.
- Finely sliced onions and strips of bacon on top, bake on the hot tray for eight minutes until the edge is dark.
One tip
The thinner the better. The dough may be almost translucent in places.
