On hot days the Japanese eat their noodles cold: soba on a bamboo tray, a bowl of dip beside it. You take a bundle of noodles, dunk it, slurp. The slurping is part of it.

- 30 gSoy sauce (2 tbsp)
- 5 gSugar (1 tsp)
- 20 gSpring onion
- 2 gNori, in strips
- 100 ml water, wasabi, sesame seeds
How to make it
- Bring the soy sauce, water and sugar briefly to the boil and let it cool. That is the dip.
- Cook the soba as the packet says, cool them in iced water and drain them well.
- Arrange the noodles with the nori, dip with the spring onion and wasabi alongside.
One tip
The Japanese drink the noodle cooking water at the end with the remaining dip. Try it.
