A Russian dish with a French name that conquered the world in the fifties. The meat is fried only briefly, and the sauce of mushrooms, mustard and soured cream does the rest.

- 150 gSoured cream
- 10 gMustard (2 tsp)
- 10 gTomato purée (2 tsp)
- 150 mlBeef stock
- 20 gButter
- 10 gPlain flour (2 tsp)
- 150 gEgg noodles
- Paprika, parsley, salt, pepper
How to make it
- Cook the noodles. Sear the meat in half the butter in two batches for one minute each and take it out.
- Fry the mushrooms and onion brown in the rest of the butter, stir in the flour, tomato purée and paprika, deglaze with the stock.
- Stir in the mustard and soured cream, meat back in, only heat it through without boiling. Serve with parsley on the noodles.
One tip
If the sauce boils after the soured cream, it splits. Low heat, short time.
