A gratin needs nothing but time in the oven. The starch in the potatoes thickens the cream, and the cheese makes the crust. A side to a roast, or a meal of its own with a salad.

  • 800 gPotatoes, waxy
  • 250 mlDouble cream
  • 150 mlMilk
  • 100 gGruyère, grated
  • 10 gButter, for the dish
  • Garlic, nutmeg, thyme, salt, pepper

How to make it

  1. Peel the potatoes and slice them thinly on a mandoline, and do not wash them.
  2. Bring the cream and milk to the boil with the garlic, nutmeg, salt and pepper and let the potatoes stand in it for five minutes.
  3. Layer into a buttered dish, cheese and thyme over the top, bake at 180 degrees for an hour.

One tip

Do not wash them, the starch should stay on. It is what binds the sauce.
