A bean patty has to do two things: hold together and turn crisp outside. Rice and oats bind it, and half an hour in the fridge makes it firm.

- 240 gBlack beans, drained (1 tin)
- 150 gSweet potato
- 60 gBrown rice, raw
- 30 gRolled oats
- 50 gOnion
- 120 gWholemeal roll (2 piece)
- 40 gSalad leaves
- 60 gTomato
- 20 gGherkins
- 15 gCanola oil (1 tbsp)
- Cumin, peppers, garlic, salt, pepper
How to make it
- Cook the rice. Dice the sweet potato and steam it soft.
- Roughly mash the beans, mix with the sweet potato, rice, oats, onion, garlic and spices, shape two patties, chill for thirty minutes.
- Fry the patties in the oil for five minutes a side.
- Toast the buns and fill with salad, patty, tomato and cucumber.
One tip
Only mash the beans, do not blend them. Pieces give bite.
