A bean patty has to do two things: hold together and turn crisp outside. Rice and oats bind it, and half an hour in the fridge makes it firm.

Ingredients

  • 240 gBlack beans, drained (1 tin)
  • 150 gSweet potato
  • 60 gBrown rice, raw
  • 30 gRolled oats
  • 50 gOnion
  • 120 gWholemeal roll (2 piece)
  • 40 gSalad leaves
  • 60 gTomato
  • 20 gGherkins
  • 15 gCanola oil (1 tbsp)
  • Cumin, peppers, garlic, salt, pepper

How to make it

  1. Cook the rice. Dice the sweet potato and steam it soft.
  2. Roughly mash the beans, mix with the sweet potato, rice, oats, onion, garlic and spices, shape two patties, chill for thirty minutes.
  3. Fry the patties in the oil for five minutes a side.
  4. Toast the buns and fill with salad, patty, tomato and cucumber.

One tip

Only mash the beans, do not blend them. Pieces give bite.
