In Mexico black beans are what potatoes are here: always there, always good. From a tin they are a meal in ten minutes, and with tortillas a filling one.

- 250 gBlack beans, drained
- 50 gOnion
- 10 gOlive oil (1 tbsp)
- 15 gLime (½ piece)
- 50 gCorn tortillas (2 piece)
- Cumin, garlic, coriander, salt
How to make it
- Fry the onion and garlic in the oil until translucent, toast the cumin briefly.
- Add the beans with a little water, simmer for five minutes, crushing a few of them.
- Season with lime and salt, coriander over the top, warm the tortillas in the pan.
One tip
With a fried egg on top it becomes breakfast, with rice it becomes dinner.
