In Mexico black beans are what potatoes are here: always there, always good. From a tin they are a meal in ten minutes, and with tortillas a filling one.

Ingredients

  • 250 gBlack beans, drained
  • 50 gOnion
  • 10 gOlive oil (1 tbsp)
  • 15 gLime (½ piece)
  • 50 gCorn tortillas (2 piece)
  • Cumin, garlic, coriander, salt

How to make it

  1. Fry the onion and garlic in the oil until translucent, toast the cumin briefly.
  2. Add the beans with a little water, simmer for five minutes, crushing a few of them.
  3. Season with lime and salt, coriander over the top, warm the tortillas in the pan.

One tip

With a fried egg on top it becomes breakfast, with rice it becomes dinner.
