Chia seeds bind liquid and turn into pudding overnight. The mango goes on top as a purée and is all the sweetness it needs.

Ingredients

  • 30 gChia seeds (2 tbsp)
  • 200 mlAlmond milk, unsweetened
  • 150 gMango
  • 10 gMaple syrup (2 tsp)
  • Mint

How to make it

  1. Stir the chia seeds into the almond milk with the maple syrup in a jar. Stir again after five minutes so nothing clumps.
  2. Cover and leave in the fridge for at least four hours or overnight.
  3. Dice the mango and blend it, then spoon it onto the pudding. Mint over the top.

One tip

That second stir after five minutes is the difference between pudding and a lump at the bottom of the jar.
