Chia seeds bind liquid and turn into pudding overnight. The mango goes on top as a purée and is all the sweetness it needs.
Ingredients
Forserving
- 30 gChia seeds (2 tbsp)
- 200 mlAlmond milk, unsweetened
- 150 gMango
- 10 gMaple syrup (2 tsp)
- Mint
How to make it
- Stir the chia seeds into the almond milk with the maple syrup in a jar. Stir again after five minutes so nothing clumps.
- Cover and leave in the fridge for at least four hours or overnight.
- Dice the mango and blend it, then spoon it onto the pudding. Mint over the top.
One tip
That second stir after five minutes is the difference between pudding and a lump at the bottom of the jar.
