An omelette takes any vegetable that was in the pan before it. The mushrooms need five minutes, the egg three, and the tomatoes and rocket go on raw at the end.

- 80 gMushrooms
- 80 gCherry tomatoes
- 5 gButter
- Salt, pepper, parsley
- 20 gRocket
- 20 gGouda, grated
- 50 gCucumber
How to make it
- Slice the mushrooms and fry them in butter for five minutes until they colour. Season with salt.
- Beat the eggs, pour them over the mushrooms, heat down to medium.
- Push the edges to the middle until the surface is almost set. Fold it, slide it onto the plate, then add the cheese, halved tomatoes, rocket and cucumber slices, and finish with parsley.
One tip
The tomatoes go raw onto the finished omelette. In the pan they turn watery and the egg never sets.
