The breakfast that is also a dinner. Peppers and onion in tomatoes, the eggs poach in it, and the whole pan goes on the table.

- 110 gEggs (2 piece)
- 200 gTinned tomatoes
- 100 gPeppers
- 30 gOnion
- 10 gOlive oil (1 tbsp)
- Garlic, cumin, paprika, salt, parsley
How to make it
- Dice the onion and pepper and soften them in oil for five minutes. Add the garlic, cumin and paprika and toast for a minute.
- Add the tomatoes, crush them with the spoon, salt, and reduce for ten minutes until the sauce is thick.
- Press two hollows into the sauce and crack an egg into each. Lid on, six to eight minutes, until the white is set and the yolk still soft.
- Parsley over the top, eat straight from the pan.
One tip
The sauce has to be thick before the eggs go in. In a thin sauce they run apart.
