On the New England coast this soup is on every corner: clams, potatoes, milk, a little bacon. It is thick enough for the spoon to stand up.

  • 200 gPotatoes
  • 60 gOnion
  • 40 gCelery
  • 30 gStreaky bacon (2 slices)
  • 300 mlMilk
  • 50 mlDouble cream
  • 15 gPlain flour (1 tbsp)
  • 10 gButter
  • Thyme, bay leaf, salt, pepper

How to make it

  1. Render the bacon in the butter, soften the onion and celery in it, dust the flour over.
  2. Add the diced potatoes, milk, thyme and bay and simmer for twenty minutes until the potatoes are soft.
  3. Add the clams and cream, let it stand for five minutes without boiling. Season it.

One tip

Clams turn tough if they boil. They need heat, not time.
