On the New England coast this soup is on every corner: clams, potatoes, milk, a little bacon. It is thick enough for the spoon to stand up.

- 30 gStreaky bacon (2 slices)
- 300 mlMilk
- 50 mlDouble cream
- 15 gPlain flour (1 tbsp)

- Thyme, bay leaf, salt, pepper
How to make it
- Render the bacon in the butter, soften the onion and celery in it, dust the flour over.
- Add the diced potatoes, milk, thyme and bay and simmer for twenty minutes until the potatoes are soft.
- Add the clams and cream, let it stand for five minutes without boiling. Season it.

Clams turn tough if they boil. They need heat, not time.
