A poke bowl in shape, Middle Eastern in content: rice instead of sushi rice, falafel instead of fish, a yoghurt dip instead of soy sauce. With shop-bought falafel, a quarter of an hour.

- 50 gAvocado (½ piece)
- 80 gCherry tomatoes
- 60 gCucumber
- 40 gSoya yoghurt, plain (2 tbsp)
- 10 gLemon juice (2 tsp)
- Parsley, garlic, cumin, salt
- 40 gCarrot
How to make it
- Cook the rice. Warm the falafel in the oven or a pan.
- Stir the soya yoghurt with the lemon, garlic, cumin and salt.
- Rice into the bowl, falafel, edamame, diced carrot, avocado, tomatoes and cucumber on top, dip and parsley over it.
