Soba are buckwheat noodles, nutty and dark. Cold with vegetables and a dressing of soy, sesame oil and lime they make a lunch that does not send you to sleep.

- 100 gCarrot
- 30 gSoy sauce (2 tbsp)
- 10 gSesame oil (1 tbsp)
- 15 gSesame seeds (1 tbsp)
- 20 gLime juice (1 tbsp)
- Ginger, chilli
How to make it
- Cook the soba as the packet says and rinse them cold. Blanch the broccoli florets and edamame for three minutes.
- Whisk the soy sauce, sesame oil, lime, ginger and chilli.
- Arrange the noodles with the vegetables and shredded carrot in bowls, dressing over them, sesame on top.
One tip
Rinse the soba thoroughly after cooking or they stick.
