In Ayurvedic cooking kitchari is the dish that settles the stomach: lentils and grain, cooked soft, with turmeric, ginger and cumin. Here with quinoa and broccoli, one pot, no effort.

Ingredients

  • 100 gQuinoa
  • 100 gRed lentils
  • 200 gBroccoli
  • 100 gCarrots
  • 15 gCoconut oil (1 tbsp)
  • 600 mlVegetable stock
  • 10 gLemon juice (2 tsp)
  • Ginger, turmeric, cumin, mustard seeds, coriander, salt

How to make it

  1. Toast the mustard seeds and cumin in the coconut oil until they pop, add the ginger and turmeric.
  2. Add the rinsed quinoa and lentils, pour in the stock, simmer for fifteen minutes.
  3. Add the broccoli and carrot in pieces, ten minutes more until everything is soft. Season with lemon and coriander.

One tip

Kitchari is allowed to be mushy. That is not a fault, that is the idea.
