- 400 gTomatoes, tinned

- 30 gTomato purée (2 tbsp)
- 1000 mlVegetable stock
- 20 gOlive oil (2 tbsp)
- 20 gLemon juice (1 tbsp)
- Coriander, parsley, cinnamon, ginger, turmeric, salt, pepper
How to make it
- Finely dice the onion, celery and carrots, soften them in the oil for five minutes, toast the spices and tomato purée with them.
- Add the lentils, tomatoes and stock and simmer for thirty minutes.
- Add the chickpeas, cook ten minutes more, season with lemon, salt and the herbs.
One tip
A spoon of flour stirred into a little water and cooked in makes it as velvety as the original.
