They are called hash browns in the States and rösti in Switzerland. The trick is the same: wring the grated potatoes out until they are dry, then leave them alone in a little fat.

- 250 gPotatoes
- 100 gEggs (2 piece)
- 40 gStreaky bacon (3 slices)
- 10 gCanola oil (1 tbsp)
- Salt, pepper
How to make it
- Coarsely grate the potatoes, wring them out hard in a cloth, salt them.
- Fry the bacon crisp in the pan, take it out, leave the fat.
- Press the potatoes into the pan with the oil as a flat cake, fry for seven minutes a side without stirring.
- Fry the eggs alongside and serve it all together.
One tip
The drier the potatoes, the crisper the hash brown. Wringing them out is half the work.
