Grated potatoes fried crisp, with two fried eggs and streaky bacon. An American diner breakfast.

They are called hash browns in the States and rösti in Switzerland. The trick is the same: wring the grated potatoes out until they are dry, then leave them alone in a little fat.

Ingredients

  • 250 gPotatoes
  • 100 gEggs (2 piece)
  • 40 gStreaky bacon (3 slices)
  • 10 gCanola oil (1 tbsp)
  • Salt, pepper

How to make it

  1. Coarsely grate the potatoes, wring them out hard in a cloth, salt them.
  2. Fry the bacon crisp in the pan, take it out, leave the fat.
  3. Press the potatoes into the pan with the oil as a flat cake, fry for seven minutes a side without stirring.
  4. Fry the eggs alongside and serve it all together.

One tip

The drier the potatoes, the crisper the hash brown. Wringing them out is half the work.
