Tinned chickpeas, tahini, lemon, garlic, a stick blender. The result keeps for a week in the fridge and belongs on bread, in wraps and next to vegetables.

- 240 gTinned chickpeas, drained (1 tin)
- 30 gTahini (2 tbsp)
- 15 gOlive oil (1.5 tbsp)
- Lemon, garlic, cumin, salt, 3 tbsp cold water
How to make it
- Rinse the chickpeas. Into a tall container with the tahini, the juice of half a lemon, a clove of garlic, cumin and salt.
- Blend, adding cold water bit by bit, until it is creamy. Blend two minutes longer than you think.
- Into a bowl, press a hollow into it, olive oil in the hollow, paprika over the top.
One tip
The cold water makes hummus pale and airy. Use only oil and you get a heavy paste.
